American Style Spiced Apple Muffins with Pecan Streusel Topping

As the weather has now officially started to be Winter here in London I thought that these spiced muffins were the perfect thing to make. The key to these is to make sure that you don’t overmix it! If its overbeaten then its going to leave you with dense muffins, a few light stirs and a few lumps won’t hurt you.

Now these muffins use Apples, but you could always substitute in Apricots or Pear to make it a really yummy summery mix.

These muffins are from Delia Smith (aka the queen of British baking, but I’ve made some minor changes and so can you)

So, what you’re going to need it:

For the Muffins:

  • 350g of Bramley Apples cut into 1cm cubes
  • 110g of Butter
  • 275g of Plain Flour
  • 1 teaspoon of Baking powder
  • 1 teaspoon of Cinnamon
  • 1 teaspoon of Ground Cloves
  • 1/2 of whole Nutmeg grated
  • 2 Large Eggs
  • 75G of Golden Caster Sugar
  • 175ml of Milk

For the Streusel topping:

  • 50 of Peacan Nuts, Chopped
  • 75g of Self Raising Flour
  • 75g of Demerara Sugar
  • 25g of Butter
  • 1 Tablespoon of cold water

What you’re going to need to do:

  1. First off, melt your butter in a saucepan on a low heat.
  2. Sift together the Flour, Baking Powder, Cinnamon, Cloves and Nutmeg
  3. Mix together the Eggs, Sugar and Milk and whisk them until they’re light and pale
  4. Now, pour the melted butter into the wet mixture and combine this thoroughly
  5. Then slowly Fold in to this wet mix the dry mixture, again making sure not to over work this
  6. Finally add in your chopped apple
  7. Spoon this into 12 lined Muffin cases
  8. Mix together the topping ingredient until you have a crumble mixture
  9. Spoon this mixture on to the muffins
  10. Bake in a 190c oven for 30 mins until it all cooked through
